2013 a New Year

So happy new year to all my readers

So what is 2013 going to bring for your all, me well I have a few things already lined up.

2013 is my 20th wedding anniversary, wow 20 years, its gone quick.

I also in february doing my level 2 in athletics coaching – must be mad!! I realised I need to get fitter so on a new health kick, and making lots of fresh healthy soup in my christmas pressie, my soup maker.

I am going to try to be less stress in my life, now this one is going to be hard with my job and schedule, but I must learn to BREATHE DEEPLY!!!

We have already booked our hols, off to Crete, I have no idea where? but as long as its hot anywhere sounds good, we are taking one of Beths friends so may be an experience but hoping she wont have “I’m bored” comments



My daughter has been asking about becoming a vegetarian for a while now, and I caved and gave in.

So what was the 1st thing I did bought lots of vegetarian meals, ingredients in order to make food for her. There are a good selection from Linda McCartney, Quorn, shops own mince etc. So my freezer is stocked up with these.

Saturday 15th she had bolognese using vegetarian mince, but that night was really sick and ill. I wondered if the mince was ok, so had several mouthfuls the next day, from what was left, and was fine, so thought nothing of it.

Friday 21st make her quorn beef in black bean sauce, and while I was out she was sick again. I came home to find her been ill again, so alarm bells started. Again I tried the food I cooked, to make sure it was ok and was. Working it out, she hadnt had any quorn products from the previous saturday to the friday. So googled – Quorn Ill sick and wow to my surprise found loads of cases of people being ill after eating quorn.

I could carry on but it seems that some people have an allergic reaction to some of the ingredients in Quorn or intolerant to it. So armed with the facts presented it all to the rest of the family, so is now reverting back to free range chicken and prawns in her diet now. She will have the Linda McCartney meals I bought, as she seems to be ok with that.

The bundles of quorn I purchased, well as I seem to be ok with Quorn, looks like I will be eating it!

Pizza anyone?

It was an unusual predictament, I was home alone for dinner but I fancied Pizza. The frozen ones I had were large and toppings I wasnt really keen on, didnt have the time/couldnt be bothered to make my own dough in the bread maker, so what to do?

I have an idea, I got some small garlic and coriander nan breads, ooo now would that work.

Answer yes, they were very yummy and a quick solution for homemade pizza.

I found a tube of tomato puree in the fridge

Now for the toppings, I really fancied vegetarian so opted for onion and mushroom

Then for the cheese

The result, 2 small pizzas, the garlic and corriander gave it a nice touch, very pleased with them
